Triple Mushroom Stir-fry


  • 1 tablespoon extra virgin coconut oil

  • 2 cups fresh sliced shiitake mushrooms

  • 2 cups fresh sliced mushrooms

  • 1 cup canned mushrooms

  • 1/4 cup light soy sauce

  • 2 tablespoons dry sherry

  • 2 tablespoons honey

  • 1 cup low sodium, low fat vegetable broth

  • 2 tablespoons thinly sliced green onion

  1. In a wok over high heat, heat the extra virgin coconut oil. Add the mushrooms and saute for 4 minutes.
  2. Add soy sauce, sherry, honey, and vegetable broth to the wok. Cover and steam for 2 minutes. Garnish with green onions.
