Tangy Green Beans


  • 1-1/2 pounds fresh green beans, trimmed and snapped

  • 2 tablespoons and 1/4 teaspoon honey mustard

  • 1/4 cup distilled white vinegar

  • 1/4 cup extra virgin coconut oil

  • 1/2 cup chopped fresh chives

  • salt and pepper to taste

  1. Bring a large saucepan of water to boil, and cook beans uncovered until tender but crisp, 3 to 4 minutes. Remove from heat, drain, and immerse in a medium bowl filled with enough ice water to cover.
  2. In a small bowl, mix honey mustard, vinegar, melted extra virgin coconut oil, and chives. Season with salt and pepper.
  3. Drain ice water, and pour the honey mustard mixture over the beans. Stir to coat.
