Simple Tuna Salad


  • 12 ounces canned chunk solid white tuna packed in water, drained

  • 1⁄2 cup celery, finely diced

  • 2 tablespoons fresh parsley, chopped

  • 2 tablespoons reduced-calorie mayonnaise

  • 1⁄2 teaspoon Dijon mustard

  • 1⁄2 teaspoon table salt

  • 1⁄4 teaspoon black pepper, freshly ground

  1. Bine tuna, celery and parsley in a medium bowl.
  2. Add mayonnaise, mustard, salt and pepper; stir to combine. Yields about 1/2 cup per serving.
  3. For a flavor boost, add 1/4 cup of diced black or green olives (does not increase the recipe’s points value).
