Zucchini and Cherry Tomato Salad


  • 8 oz cherry tomatoes, halved or quartered

  • ¼ cup chopped raw walnuts

  • 2 tbsp fresh basil, torn into small pieces

  • 2 tbsp extra-virgin olive oil

  • 1 zucchini, sliced paper thin with a vegetable peeler or mandolin

TIP: For best results, please enjoy this as part of a complete SANE meal (lots and lots of non-starchy vegetables, lots of nutrient dense protein, and some whole food fats).

Mix the tomatoes, walnuts, basil, and oil in a bowl.

Season with salt and pepper to taste and leave to stand for 20 minutes.

Add the zucchini, toss, and garnish with basil. Serve immediately.
