Red Wine Mushrooms


  • 1/4 cup red wine vinegar

  • 1/4 cup extra virgin coconut oil

  • 3/4 small onion, thinly sliced

  • 3/4 teaspoon salt

  • 1 tablespoon and 1-1/2 teaspoons dried parsley

  • 3/4 teaspoon ground dry mustard

  • 2-1/4 teaspoons brown sugar

  • 1-1/2 cloves garlic, peeled and crushed

  • 3/4 pound small fresh button mushrooms

  1. In a medium saucepan, mix red wine vinegar, melted extra virgin coconut oil, onion, salt, parsley, dry mustard, brown sugar and garlic. Bring to a boil. Reduce heat. Stir in mushrooms. Simmer 10 to 12 minutes, stirring occasionally. Transfer to sterile containers and chill in the refrigerator until serving.
