Dill Cucumbers and Tomatoes


  • 1/2 cup cider vinegar

  • 2 teaspoons white sugar

  • 1 teaspoon salt

  • 1 teaspoon chopped fresh dill weed

  • 1/2 teaspoon ground black pepper

  • 1/4 cup extra virgin coconut oil

  • 4 cucumbers, sliced

  • 2 cups sliced red onion

  • 4 ripe tomatoes, cut into wedges

  1. In a large bowl, mix the vinegar, sugar, salt, dill, pepper, and melted oil. Add cucumbers, onion, and tomatoes. Toss, and let stand at least 15 minutes before serving.
