Chicken Egg Drop Soup


  • 4 cups low sodium chicken broth (use a good quality stock)

  • 1⁄2 teaspoon soy sauce

  • 1⁄2 cup cooked chicken breast, chopped

  • 1⁄2 cup frozen green pea (baby peas are nice)

  • 1⁄4 cup green onion, thinly sliced

  • 1 egg, lightly beaten

  1. In saucepan, bring chicken stock and soy sauce to a boil. Add chicken, peas and green onion; bring to a boil again.
  2. Remove from heat; drizzle in egg in slow steady stream. Let sit for 1 minute for egg to set.
  3. Stir gently before ladling into bowls.
