15 Minute Grape Tomatoes


  • 6 cups halved grape tomatoes

  • 3 tablespoons extra virgin coconut oil

  • 3 tablespoons sweetened rice vinegar

  • 3/4 teaspoon garlic powder

  • 3/4 teaspoon dried oregano, or to taste

  • salt to taste (optional)

  1. Mix tomatoes, melted extra virgin coconut oil, rice vinegar, and garlic powder together in a bowl. Crumble oregano between fingers to release flavor and add to the tomatoes; stir to coat. Season with salt. Let flavors marinate before serving, 5 minutes or up to an hour.
