Tangy Trout


Ingredients

  • 2 cups plain yogurt

  • 2 cucumber, shredded

  • 1/4 cup chopped fresh dill weed

  • 2 teaspoons lemon zest

  • 2 tablespoons extra virgin coconut oil

  • salt and pepper to taste

  • 8 (6 ounce) fillets rainbow trout

  • 2 pinches lemon pepper

Directions

  1. In a medium bowl combine the yogurt, cucumber, dill, lemon zest, melted extra virgin coconut oil and salt and pepper. Mix well and set aside.
  2. Turn oven broiler on. Coat a broiler pan with non-stick cooking spray.
  3. Sprinkle fillets with lemon pepper and place on broiler pan. broil for about 8 minutes or until fish flakes with a fork. To serve spoon yogurt sauce over fish.

Tip!

This recipe does not contain many non-starchy vegetables. To maximize your results, it is highly recommended that you eat at least three servings of non-starchy vegetables via a SANE side dish or green smoothie along with this main dish.
