Ingredients
- ½ tsp pure vanilla extract
- 4 egg whites
- 2 eggs
- 1 cup nonfat Greek yogurt
- ½ cup water
- 1 cup vanilla UMP protein powder blend
- ½ cup unsweetened raw shredded coconut
- Cinnamon, to taste
- Optional : sugar-free vanilla syrup, to serve

TIP: For best results, please enjoy this as part of a complete SANE meal (lots and lots of non-starchy vegetables, lots of nutrient dense protein, and some whole food fats).
Place all the ingredients except the syrup into a blender in the order listed.
Blend on high until the mixture is completely smooth.
Lightly spray a large skillet with coconut oil and place over medium heat.
Pour the batter into the hot skillet. Cook for 2 to 3 minutes. Gently lift the edge of the pancake to check for browning. Once the underside is lightly browned, flip the pancake and cook for 20 to 30 seconds on the other side.
Serve immediately with syrup on top, if desired.
