Oven Omelet


Ingredients

  • 1 tablespoon butter, melted

  • 10 large eggs

  • 1/2 cup reduced-fat sour cream

  • 1/4 cup low-fat milk

  • 2 teaspoons Dijon mustard

  • 1/4 cup chopped scallion

  • 1/3 cup shredded swiss cheese

  • 3/4 teaspoon salt

  • 1/4 teaspoon paprika

Yield: 4 Level: easy

Directions

  1. Preheat oven to 325 degrees.
  2. Brush the 1 tbsp melted butter into a square baking dish (8×8 or 9×9).
  3. Beat the eggs, sour cream, milk and mustard together until well blended.
  4. Stir in the scallions, swiss cheese, salt and paprika.
  5. Pour into the buttered baking dish.
  6. Bake at 325 for about 30-35 minutes or until eggs are set but still moist.
