Asian Vegetable Soup


Ingredients

  • 2 (13 3/4 ounce) cans beef broth

  • 1⁄4 cup dry sherry

  • 1⁄3 cup sliced celery

  • 2 scallions, sliced

  • 1 tablespoon soy sauce

  • 1⁄4 cup drained sliced water chestnuts

  • 4 medium fresh mushrooms, sliced

  • 1 (7 ounce) package frozen pea pods

  • scallion, curls for garnish

Directions

  1. In saucepan, combine first 6 ingredients. Bring to boil. Reduce heat and simmer 3 minutes.
  2. Add mushrooms and pea pods. Simmer 2 minutes.
  3. Garnish with scallion curl and serve.
